The Culinary Arts program provides service for several restaurants on campus, including
an à la carte modern bistro. In this excellent learning environment, you’ll learn
to care for and maintain a full-service kitchen.
Requirements: All students must be 18 or older in order to attend the Culinary Arts
program, as one of the requirements is to have an OLCC Alcohol Service Permit along
with a valid Oregon Food Handler's Card. Students are then required to obtain a "C"
or better in practicum lab to continue on each term.

each to cover culinary arts education-related expenses, including tuition, fees, books,
supplies, and room and board.

Kitchen, Classroom, and Restaurant
The main kitchen is our lab. It has a commercially-licensed kitchen and bakery, hearth-fired
oven, à la carte restaurant stations (pantry, grill, saucier), and butchering/charcuterie
area. We supply food to the campus so you’ll feed hundreds of customers every day
as part of your curriculum.
Located on the second floor of the Calapooia Center on the Albany Campus, the Santiam Café and Bistro is operated by the students of the Culinary Arts program. This café-style of service
was developed to train students in all aspects of running a food service operation
under realistic conditions. The menu is a collaboration of instructor-created items
focusing on specific cooking skills and student creations to offer weekly and daily
specials consisting of coffee, tea, pastries, desserts, made-to-order hot items, pizza,
bread, soup, salads, and "grab & go" choices.
Finally, our state-of-the-art classroom and demonstration kitchen hosts culinary arts
classes and evening cooking classes for the community. This room has several cameras
and three large flat-screen televisions so students and instructors can interact during
lectures and demonstrations. See the classroom in action.
